The Kick-Off to Your Labor Day Cookout Is Here…

Remember snow cones? That brain-freezing sugar rush the kid version of you craved? Uh huh. Nostalgia at its yummiest. Buuuut not exactly known for its track-record in the health department.

Until now. Because when you replace that refined sugar and artificial syrup with naturally sweetened fruit, you get tons of flavor—but zero guilt. Which brings me to this newest concoction a la yours truly…

Blend up a batch (or you know, ten) for those Labor Day shenanigans as either a pre-gamer or dessert. You could even add some vodka to go the more adultish route—of course, the health factor might be called into question at this point.

But I digress. If you’re gonna make ’em this weekend (which you definitely should), lemme show you how it’s done.

So, Here’s What You Need:

  1/2 cup Watermelon (diced)

   •   2 cups Ice (crushed or cubed)

Now, Time to Make It:

1.   Place the ice cubes in a blender, then add the watermelon on top.

2.   Pulse the blender until both ingredients form a slushy texture.

3.   Transfer into festive glasses and slurp to your taste buds’ content.

P.S. going back for seconds = totally acceptable.

NUTRI MAQUI POPSICLE BITES

Ingredients:

1 tbsp. Nutri Maqui Superfruit Juice

1/2 Fresh Strawberries

1/3 Plain Greek Yogurt

1 sprig Fresh Sage Leaves

1 tsp. Raw Honey

All-Natural Stevia (to taste)

Preparation:

  1. Hull the strawberries and slice into bite-size chunks.
  2. Place all the ingredients in a blender and puree into liquefied.
  3. Line a mini muffin pan with plastic wrap or parchment paper.
  4. Spoon the mixture into eight of the muffin pan slots.
  5. Place the muffin pan in the freezer for about 30 minutes.
  6. Remove from the freezer and insert toothpicks in the center of each popsicle mold.
  7. Return to the freezer for another 30 minutes or until the popsicles have set completely.
  8. Lift up the plastic wrap in order to cleanly detach the popsicles from the muffin pan.
  9. Drizzle more honey on top for extra sweetness if desired.
  10. Enjoy…go ahead, it’s guilt-free!

Satisfy that Sweet Tooth the (Almost) Vegan Way

I say “almost” because this recipe uses 1 egg, which qualifies as an animal by-product, but true vegans need not despair. Simply substitute 1/4 cup pureed banana, 1/4 cup plain Greek yogurt or 1/4 cup oil of your choice, and you’ve got a bona fide vegan party-in-the-mouth!

And, for all you other foodies out there, meet the answer to your ongoing dilemma: Do I eat dessert and regret it later, or skip dessert and regret it RIGHT NOW? These Avocado & Almond Butter Cookies deliver all the indulgence of your favorite guilty pleasure…only without that pesky guilt-part. Rejoice!

  • Ingredients:
  1. 1 egg yolk
  2. 1 tsp. baking powder
  3. 1/4 cup almond butter
  4. 3 tbsp. raw honey
  5. 2 packets Stevia
  6. 1/2 cup almond flour*
  7. 1/4 cup dates (chopped)
  8. 1/2 avocado (mashed)

*You can easily and inexpensively make your own almond flour by grinding 1/2 cup slivered almonds in a blender or food processor until finely powdered.*

  • Preparation:
  1. Combine the mashed avocado, egg yolk, honey and almond butter together in a mixing bowl.
  2. Add the baking powder, Stevia packets and almond flour, then stir until the batter is smooth.
  3. Fold in the dates, then spoon the batter onto a greased baking sheet in the shape of cookies.
  4. Bake at 350 degrees for approximately 15 minutes, or until the cookies have cooked thoroughly.
